Zesty Green Soup in Vitamix

Zesty Green Soup

I was looking for a raw soup recipe that included avocados and found one at Beautiful on Raw.  The soup is called “Zesty Green Soup with Toppings”.

I made the soup yesterday in my Vitamix and was very pleased with the result.

What you need:

2 handfuls baby spinach

2-3 medium carrots

1/2 avocado (I actually used 2 avocados for a super thick soup)

Ginger Root to Taste (I used a one inch slice of raw ginger root – I will use more next time)

3/4 cup to 1 cup room temperature water

Spices to taste (I used chili powder.  I will add more spices in addition to the chili powder next time. Garlic and Cajun powder are suggestions.)

Gather the ingredients

Ingredients in Vitamix

Place avocados, spinach, carrots, ginger and spices in Vitamix or other high speed blender.

Pour Water into Vitamix

Pour Water into Vitamix, then blend until creamy

Zesty Green Soup

Serve Zesty Green Soup

I sprinkled a medium amount of chili powder on top of our soup, but I should have added more. I think because I added two avocados to the soup, I should have incorporated more spices. Next time.

This soup is pure health, and we felt great after our meal.  This recipe makes about two servings.

      I served it warm, but it could definitely work cold as well. My husband and I were thinking it could be a good dip for chips too. I’m really loving trying out these raw recipes. Thanks for visiting. By the way, love your de-clutter post – it feels so great to clear out the toys!
