Zesty Green Soup in Vitamix

Zesty Green Soup

I was looking for a raw soup recipe that included avocados and found one at Beautiful on Raw.  The soup is called “Zesty Green Soup with Toppings”.

I made the soup yesterday in my Vitamix and was very pleased with the result.

What you need:

2 handfuls baby spinach

2-3 medium carrots

1/2 avocado (I actually used 2 avocados for a super thick soup)

Ginger Root to Taste (I used a one inch slice of raw ginger root – I will use more next time)

3/4 cup to 1 cup room temperature water

Spices to taste (I used chili powder.  I will add more spices in addition to the chili powder next time. Garlic and Cajun powder are suggestions.)

Easy Steps to your Delicious Soup:

Gather the ingredients

Ingredients in Vitamix

Place avocados, spinach, carrots, ginger and spices in Vitamix or other high speed blender.

Pour Water into Vitamix

Pour Water into Vitamix, then blend until creamy

Zesty Green Soup

Serve Zesty Green Soup

I sprinkled a medium amount of chili powder on top of our soup, but I should have added more. I think because I added two avocados to the soup, I should have incorporated more spices. Next time.

This soup is pure health, and we felt great after our meal.  This recipe makes about two servings.

Carrot Ginger Tofu Soup

Carrot Ginger Tofu Soup made in my Vitamix

In my quest to add more raw food meals to my daily routine, I found a recipe in my Vitamix cookbook, called “Carrot Ginger Tofu Soup”.  It was so yummy that I think I might be adding this one to my list of meal regulars in our house.

The taste is so creamy and loaded with fresh veggie goodness.  The combination of fresh ginger, carrots and tofu creates a perfect flavor medley.

It is also Very easy to whip up for a quick lunch, as I did today.

Below are the steps to this super healthy and easy to make soup.

What you need:

4 medium carrots, halved

1/4 small onion, peeled

4 garlic cloves, peeled

2 T oil

1/2 t salt

pinch of white pepper

1 T fresh ginger root or ginger paste

1/3 cup light silken tofu

2 cups low sodium vegetable or chicken broth

Gather the ingredients

Add Carrots, Onion and Garlic to Vitamix to chop

Carrot Ginger Tofu Soup Veggie Saute

Saute chopped carrots, onions and garlic in oil until tender

Add Chicken Broth to Vitamix

Add Salt and Pepper

Add Tofu

Add Sauteed Veggies

Carrot Ginger Tofu Soup in Vitamix

Blend the ingredients in Vitamix. Select Variable 1, quickly increase speed to Variable 10, then to High.

Carrot Ginger Tofu Soup in Vitamix

Blend for about 3-4 minutes. Remove the top for a moment to see if steam is escaping. You will know it is done when you see the steam.

Pour your creation and serve.
