Nilla Wafers Banana Pudding

When I made sloppy joes on Monday night, I decided to complement them with another traditional recipe, banana pudding.

Nilla Wafers banana pudding is one of my most favorite desserts, especially just warm from the oven.

I made the meringue this time to top the pudding, but many times, I will just put whipped cream on top.

The meringue is one extra step, that I do not think is super critical, but I felt like making it tonight.

I have also tried this pudding with the jello banana pudding instant mix, and I do not think it tastes nearly as good as the homemade pudding.

You will notice in my photos, that I am using a makeshift double boiler.  Basically, two pots, with the pudding pot being placed in the boiling water pot.  It works, but is not ideal.

On my “to do” list, purchase a double boiler, finally. 🙂

Very Simple Ingredients for this classic dish

Separate egg yolks. You will use the whites for the meringue topping.

Mix milk, flour, salt and sugar over boiling water. Slowly mix in 3 egg yolks.

Peel five bananas and slice into bite size pieces.

This is what your pudding will look like after about 5-7 minutes of constant stirring.

Layer custard, nilla wafers and sliced bananas three times.

Mix on high power 3 egg whites and 1/4 cup sugar. We sometimes skip this step. The pudding is so sweet already. You can also just add whipped cream on top of the pudding instead of making the meringue.

Pour meringue on top, then spread the meringue to the edges of pan to seal in pudding. Then place in the oven!

Nilla Wafers Banana Pudding

Ingredients
  • ¾ cup sugar, divided into ½ cup and ¼ cup
  • ⅓ cup flour
  • dash of salt
  • 3 eggs, separated
  • 2 cups milk
  • ½ tsp.vanilla
  • 45 NILLA Wafers, divided
  • 5 bananas, sliced
Instructions
  1. Mix ½ cup sugar, flour and salt in top of double boiler.
  2. Blend in 3 egg yolks and milk.
  3. Cook, uncovered, over boiling water 10 to 12 min. or until thickened, stirring constantly.
  4. Remove from heat; stir in vanilla.
  5. Save 12 wafers for garnish. Spread small amount of custard onto bottom of 1-1/2-qt. baking dish.
  6. Cover with layers of ⅓ each of the remaining wafers, bananas and remaining custard.
  7. Repeat layers 2 times.
  8. For Meringue
  9. Beat egg whites on high speed of mixer until soft peaks form.
  10. Gradually beat in remaining sugar until stiff peaks form.
  11. Spread over custard, sealing well to edge of dish.
  12. Bake 15 to 20 min. or until lightly browned.
  13. Cool slightly.
  14. Top with reserved wafers just before serving.

Banana Chocolate Chip Muffins

banana chocolate chip muffinThis is an all time favorite recipe of my little ones that I am so excited to share with all of my wonderful readers today.

You know when it is your child’s birthday, and they are allowed to bring in a treat to school for the whole class to enjoy?

Well, this is the treat that my kids all request that I bring in to share with their classmates.

My kids always come back from school, and proudly exclaim about how all of their friends want me to give their Moms this recipe.

Yes, it is that good.

And, it is always so nice to get major good Mom points from the little ones.

I just finished making these muffins this afternoon, and my house smells so delicious.  Chocolate and banana cooking together is quite the delight for the senses.

The recipe is very simple, and I am about to share this masterpiece with you below.

Banana Chocolate Chip Muffins

First, gather the ingredients:

Then, mix the dry ingredients in a large bowl and the wet ingredients in a small bowl.

Mix wet ingredients with dry ingredients just until moistened.

Mash three bananas to create 1 cup of mashed bananas:

Gather 1 cup of chocolate chips:

Fold in the mashed bananas and chocolate chips into the wet/dry ingredient mixture:

Pour dough into lined cupcake tin:

Cook for 22-25 minutes at 350 degrees:

Cool on a wire rack for 10-15 minutes:

Here is the recipe:

Banana Chocolate Chip Muffins

Ingredients

1 3/4 cup all-purpose flour
3/4 cup sugar
1 t baking powder
1 t baking soda
1/2 t salt
1 egg
1/2 cup vegetable oil
1/2 cup plain yogurt
1 t vanilla extract
1 cup mashed ripe bananas
1 cup chocolate chips

Directions

1. In a large bowl, combine the flour, sugar, baking powder, baking soda and salt.
2. In a small bowl, combine the egg, oil, yogurt and vanilla.
3. Stir wet ingredients into dry ingredients just until moistened.
4. Fold in bananas and chocolate chips.
5. Fill greased or paper lined muffin cups two-thirds full.
6. Bake at 350 degrees for 22-25 minutes or until a toothpick comes out clean.
7. Cool for 5 minutes before removing from pans.
8. Place muffins on wire racks and cool an additional 10-25 minutes.
