Chicken Fried Rice

I just love the taste of freshly cooked chicken fried rice, especially at Benihana’s.

I never thought that I could create anything close at home until I found the recipe below.

It really is delicious, and it really is something the whole family will enjoy.

The slightly crunchy rice mixed with the fresh spring onions, mushrooms, and scrambled eggs is a tasty treat.

This is a meal that I crave about every other week.  I used brown rice instead of white rice, but either one is great.  I was just in a healthier mood today, so opted for the brown rice bags from Trader Joe’s.

Chicken Fried Rice

Easy Chicken Friend Rice Ingredients- Rice, Chicken Breasts, Mushrooms, Eggs, Spring Onions, Soy Sauce

Chop chicken breast into bite sized pieces

Saute chicken in butter

Cook chicken, then drain juice

Add cooked rice

Add cooked rice to chicken

While you are cooking the meat and rice, cook eggs on low heat. When eggs are cooked on perimeter, start pushing eggs to middle or pan.

Chop mushrooms and spring onions

Stir in eggs, mushrooms, and spring onions with rice and chicken.

Ingredients
  • 2 cups uncooked white rice
  • 1 tablespoon butter
  • 2 skinless, boneless chicken breast halves - cubed
  • salt to taste
  • 2 eggs, beaten
  • ¾ cup sliced mushrooms
  • 2 green onions, chopped
  • 1 tablespoon soy sauce, or to taste
Instructions
  1. In a saucepan bring 4 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  2. Heat butter in a large skillet over medium-high heat. Brown chicken in butter and season with salt to taste. Set chicken aside.
  3. Transfer cooked rice to the skillet in which the chicken was cooked, stirring to brown.
  4. In a separate skillet, scramble eggs.
  5. To the rice add chicken, mushrooms, green onions, eggs and soy sauce to taste.

      I know, Benihana’s is so good and so fun. Its the complete dining/entertainment experience. We actually went for my husband’s birthday this year in January, and then in March, for my birthday, I wanted to go again, so we did. Yes, I would be interested in joining your cooking show sometime.     Wow, I really like how you have this laid out step by step, that’s awesome! My wife would like this recipe. I wanted to tell you that your images might need resized a little, they took a while to load. I use a program called Vso Image Resizer that works really well for this. Anyways, thanks for sharing!
