Magnolia Bakery Vanilla Cake and Frosting Recipe

About five years ago, when Broadway was going to many preschool birthday parties, there was a cake at one of her friend’s parties that blew me away.  It was so darn good.

I had to ask for the recipe, and she emailed it to me a few days later.  That was five years ago.

Well, I FINALLY made it this week – YAY!

The recipe is from a well known bakery in New York called Magnolia Bakery.  I’ve noticed that the recipe is floating around all over the place online.  It really is unique and absolutely delicious.

The unique ingredients from what I usually use for cake are self rising flour and the addition of whole milk.

Ingredients
  • Cake Ingredients:
  • 1 cup unsalted butter, softened
  • 2 cups sugar
  • 4 large eggs, at room temperature
  • 1 ½ cups self-rising flour
  • 1 ¼ all-purpose flour
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • Traditional Vanilla Buttercream Frosting:
  • 1 cup (2 sticks) unsalted butter, very soft
  • 8 cups confectioners’ sugar
  • ½ cup whole milk
  • 2 teaspoons vanilla extract
Instructions
  1. Preheat oven to 350 degrees.
  2. In large bowl, on medium speed of an electric mixer, cream the butter until smooth. Add the sugar gradually and beat until fluffy, about 3 minutes.
  3. Add the eggs one at a time, beating well after each addition.
  4. Combine the flours and add in four parts, alternating with the milk and the vanilla extract, beating well after each addition.
  5. Spoon the batter into cups about three-quarters full.
  6. Bake until the tops spring back when lightly touched, about 20-22 minutes. Remove and cool completely before icing.
  7. Icing Instructions
  8. Place the butter in a large mixing bowl.
  9. Add 4 cups sugar and then the milk and vanilla extract.
  10. Beat until smooth and creamy.
  11. Gradually add the remaining sugar, 1 cup at a time, until the icing is thick enough to be of a good spreading consistency.
  12. Use and store at room temperature, as icing will set if chilled.
  13. Can store for up to 3 days.

I will say that the icing was a bit on the sweet side.  I will try to reduce the sweet factor a touch next time.  The consistency of the cake was perfect.  Its much denser than the boxed cakes that I typically make for birthdays.

The cake should spring back when you press your finger on it. If it does, you know it is done. After cooled, you can frost it with the decadent vanilla frosting.

Dark Chocolate Cupcakes with Vanilla Frosting

Decadent Cupcakes

Oh my goodness, these are so good.  I love homemade frosting and I love moist cupcakes.

So, when I found this recipe, it went on my “to make” list about a month ago.

Finally I made them a few days ago.

The family raved and raved.

Poor Mountain Man only got two of them.

I need to make them again soon.

They’re pretty easy to make and the few extra steps are so worth it.

Here’s the scoop:

Ingredients for Hershey's Dark Chocolate Cupcakes with Vanilla Frosting

Gather Ingredients: sugar, flour, Hershey’s Dark Chocolate Cocoa, eggs, baking soda, salt, butter, vanilla, vegetable oil, milk, water

Dark Chocolate Cupcakes Dry Ingredients

Mix sugar, flour, cocoa, baking powder, baking soda and salt in large bowl

Cupcakes wet ingredients

Add eggs, oil and vanilla to dry ingredients and blend on medium for 2 minutes

Add Boiling Water

Add 1 cup boiling water to bowl and stir in

The boiling water will create a very moist cupcake in the end.  At this point, the batter will feel a little runny, but there is no need to worry.  It is supposed to somewhat runny at this point.  This step makes the texture of the cupcakes perfect and very moist.

 Scoop out batter

Scoop out batter. I used a 1/4 cup and this was perfect to fill the cupcake liners halfway full.

Place cupcakes in oven at 350 degrees for 25 minutes

Homemade Vanilla Frosting Ingredients

Homemade Vanilla Frosting Ingredients: 2 sticks softened unsalted butter, 4 cups powdered sugar, 2t vanilla

Blend butter until broken up

add powdered sugar

Add 4 cups powdered sugar little by little, then add the 2t of vanilla and blend for 2-3 minutes until the frosting is at desired consistency. You can add water, but I did not need to.

After cupcakes have cooled on wire racks, you can frost them

I want to thank Aly at 17 Sirens for sharing this recipe. I did not add coffee as Aly suggests, but I’m sure that would add a nice flavor kick too!

Dark Chocolate Cake:
  • 2 cups sugar
  • 1-3/4 cups all-purpose flour
  • ¾ cup HERSHEY’S SPECIAL DARK Cocoa
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
Vanilla Frosting:
  • 2 Sticks Softened, unsalted butter
  • 4 cups powdered sugar
  • 2 teaspoons vanilla (or more to taste)
  • 1-2 teaspoons water (optional)
Instructions
  1. Heat oven to 350°F. Line 2 cupcake tins with paper liners.
  2. Gently mix together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl.
  3. Add eggs, milk, oil and vanilla to dry mixture and beat on medium speed for about 2 minutes. Stir in boiling water. Your batter should be somewhat runny or pourable.
  4. Use a ¼ cup measuring cup or liquid measuring cup to scoop out dough. Fill each cupcake liner about halfway full.
  5. Bake 25 to 30 minutes or until wooden toothpick inserted into center comes out clean. Remove from pans to wire racks. Cool completely.
  6. Vanilla Frosting
  7. Place your butter in a bowl and mix for a minute to break up the sticks.
  8. Add powdered sugar a little at a time, completely incorporating into the butter.
  9. Add vanilla. Mix for 2-3 minutes. If you frosting is too thick, add 1-2 teaspoons of water to thin.
  10. Frost your cupcakes and ENJOY!
